Ingredients
California Classic8 cup spring mix lettuce
cup cooked white kidney beans
1 avocado, sliced
cup hearts of palm, sliced
cup toasted pecans
10 grape tomatoes
Pesto175 g fresh basil, washed and stems removed (1 large bunch)
cup raw sunflower seeds
1 cup raw pine nuts
1 cup olive oil
1 Tbsp sea salt
5 large cloves garlic
bag spinach
Directions
California Classic Pesto1. In food processor, process garlic until finely minced.
2. Add pine nuts, sunflower seeds and salt, and process until as fine as possible. Add a bit of the oil if needed to keep things moving.
3. Add spinach and process.
4. Add basil and olive oil and process until smooth.
5. In small bowl, mix white kidney beans with enough pesto to coat.
6. Toss lettuce in dressing of your choice and place in large bowls.
7. Top with remaining ingredients and serve.
