Directions for: Smoked Meatloaf
Ingredients
Q BBQ Sweet and Tangy Sauce1 cups brown sugar
2 cups cider vinegar
1 cup pineapple juice
cup molasses
Tbsp onion powder
Tbsp garlic powder
5 cups tomato ketchup
1 cups water
cup soy sauce
1 Tbsp Sambal Oelek chili paste
Tbsp black pepper
1 Tbsp Worcestershire sauce
Meatloaf2 Tbsp kosher salt
1 Tbsp black pepper
1 Tbsp garlic powder
1 Tbsp onion powder
cup Dijon mustard
4 large eggs
ground beef
1 cup dry breadcrumbs
Directions
Q BBQ Sweet and Tangy Sauce1. To make the barbecue sauce, combine brown sugar, cider vinegar, pineapple juice, molasses, onion powder, garlic powder, tomato ketchup, soy sauce, chili paste, black pepper, Worcestershire sauce and 1 cups of water in a saucepot.
2. While stirring constantly, bring mixture to a boil, lower heat, and simmer for 45 minutes.
Meatloaf1. Preheat oven to 325F.
2. To make the meatloaf, whisk together salt, black pepper, garlic powder, onion powder, Dijon mustard, eggs, and cup of the reserved Q BBQ barbecue sauce.
3. Add ground beef and stir until ingredients are evenly distributed.
4. Stir breadcrumbs into the mixture until combined then press mixture into a medium loaf pan.
5. Place loaf in oven and cook for 165 minutes, or until meatloaf reaches 160F on a meat thermometer.
6. Slice and serve with Q BBQ Tangy and Sweet Barbecue Sauce.
