Directions for: Cedar-Planked Black Bean Salmon Fillets
Ingredients
1 cedar plank, soaked for 4-6 hours in water
3 oz coarse sea salt
6 6-oz western salmon fillets, boneless
salt and fresh ground pepper
2 Tbsp chopped fresh cilantro
4 green onions, finely chopped
2 shallots, finely chopped
1 tsp sesame oil
1 Tbsp rice vinegar
cup black bean sauce
1 lemon, for squeezing
Directions
1. Preheat frill to high (400 degrees F). Season fillets with salt and pepper.
2. In a bowl, combine cilantro, onions, shallots, sesame oil, vinegar, and Black Bean sauce, season to taste. Blend together well and use this mixture to form a crust on the top of the salmon fillets (not the skin side).
3. Season soaked planks with coarse sea salt and place on the grill. Close lid and heat 3-5 minutes until they start to crackle and smoke. Place salmon on the hot plank, skin side down. Close lid and plank-bake salmon for 12-15 minutes (medium doneness), checking periodically to ensure the plank is not aflame. Squeeze lemon over salmon fillets. Serve immediately.
