
This is one of my moms creations. Its a great recipe for the summer grill! Serve the chicken with pita bread and tzaziki sauce.
Directions for: Georgia's Grilled Chicken
Ingredients
8 chicken thighs or drumsticks, boneless, skinless
2 tsp dried Greek oregano (10 ml)
3 Tbsp chopped fresh dill (45 ml)
3 Tbsp chopped fresh parsley (45 ml)
1 to 2 garlic cloves
pinch of cayenne
Juice of 1 lemon
2 Tbsp olive oil (30 ml)
Coarse salt and freshly cracked black pepper
Vegetable oil, for brushing the grill
Directions
1. Add chicken, herbs, garlic, olive oil and lemon juice to a bowl. Toss to coat the chicken. Add the lemon juice and blend until smooth. Cover with plastic wrap and marinate for 4 hours to 6 hours.
2. Preheat grill to high.
3. Remove marinade from chicken. Brush the grill with oil. Season the chicken with salt and pepper.
4. Add chicken to grill. Turn heat to medium and grill chicken for about 4 to 5 minutes on each side or until chicken is just cooked through.
