Succulent lamb loin prepared in a macadamia and anise marinade then dressed in lemongrass and arugula.
Directions for: Grilled Lamb Loin with Arugula and Macadamia Nut Salad
Ingredients
Marinade2 star anise, crushed
2 garlic, cloves, crushed
2 macadamia nuts, crushed
tsp freshly crushed black pepper
salt
Dressing1 Tbsp lemon juice
3 Tbsp olive oil
1 tsp finely minced lemongrass
salt
freshly crushed black pepper
Lamb8 3 oz lamb, loins
2 bunches fresh arugula, washed
cup macadamia nuts
Directions
Marinade1. Mix marinade ingredients together.
Dressing1. Mix the lemon juice, olive oil, lemon grass together. Season. Set aside.
Lamb1. Place lamb in a dish.
2. Mix marinade ingredients and coat lamb. Set aside.
3. Grill lamb for 3 minutes on each side.
4. Leave another 2 to 3 minutes if you like it well done.
5. Let the lamb rest for 5 minutes.
6. Place some arugula on a plate.
7. Place sliced lamb on top.
8. Sprinkle with macadamia nuts and drizzle with dressing.
