Grilled Lamb Loin with Arugula and Macadamia Nut Salad
Succulent lamb loin prepared in a macadamia and anise marinade then dressed in lemongrass and arugula.

Ingredients

Marinade

2 star anise, crushed

2 garlic, cloves, crushed

2 macadamia nuts, crushed

tsp freshly crushed black pepper

salt

Dressing

1 Tbsp lemon juice

3 Tbsp olive oil

1 tsp finely minced lemongrass

salt

freshly crushed black pepper

Lamb

8 3 oz lamb, loins

2 bunches fresh arugula, washed

cup macadamia nuts

Directions

Marinade

1. Mix marinade ingredients together.

Dressing

1. Mix the lemon juice, olive oil, lemon grass together. Season. Set aside.

Lamb

1. Place lamb in a dish.

2. Mix marinade ingredients and coat lamb. Set aside.

3. Grill lamb for 3 minutes on each side.

4. Leave another 2 to 3 minutes if you like it well done.

5. Let the lamb rest for 5 minutes.

6. Place some arugula on a plate.

7. Place sliced lamb on top.

8. Sprinkle with macadamia nuts and drizzle with dressing.
