Pulled Pork Lasagne

Directions for: Pulled Pork Lasagne

Ingredients

Tomato Sauce

4 oz tomato paste

1 finely chopped onion

2 tsp garlic, roasted

2 tsp dry basil

2 tsp dry oregano

1 tsp fresh ground black pepper

12 oz tomato juice

1 cup cubed tomatoes

salt

Pulled Pork

cup paprika

3 tsp ground chili powder

3 tsp chili flakes

3 tsp cayenne

3 tsp garlic powder

3 tsp dry mustard

3 tsp onion powder

1 Tbsp black pepper

1 Tbsp fine sea salt

2 Tbsp sugar

2 Tbsp brown sugar

1 tsp cumin

1 tsp oregano leaves

3-4 lbs pork butt (bone-in)

Assembly

Pulled Pork (see recipe)

12 cooked lasagne sheets, standard size

3 cup Asiago, white cheddar and Mozzarella mix, grated

Tomato Sauce, cooled (see recipe)

1 Tbsp vegetable oil

Directions

Tomato Sauce

1. Sweat onions under medium heat, about 10 minutes.

2. Add tomato paste and stir into onions.

3. Cook for 2 minutes, careful not to burn the onions.

4. Add garlic, basil, oregano, black pepper, and cook for 3 minutes.

5. Add tomato juice and stir into onion mixture.

6. Add cubed tomatoes and cook for approximately 15 to 20 minutes.

7. Check for seasoning, add salt were needed.

Pulled Pork

1. Preheat oven to 225 degrees Fahrenheit.

2. Combine all of the above ingredients, except the pork.

3. Generously rub the spices on the pork.

4. Cover pork with tin foil and place in oven for 12 hours.

5. After cooking, pull pork apart with hands and set aside to cool for lasagne.

Assembly

1. Preheat oven to 350 degrees Fahrenheit.

2. Grease a 12 x 9-inch and 4-inch deep baking pan with oil.

3. Lay 1/3 cooked lasagne noodles in bottom of pan.

4. Lay 1/3 of tomato sauce over noodles to cover.

5. Lay of pulled pork over tomato sauce.

6. Lay 1/3 of cheese mixture over pulled pork.

7. Repeat the above pattern for next layer.

8. Cover last layer with remaining noodles.

9. Cover noodles with a little tomato sauce and remaining cheese. Be sure to not use all of the tomato sauce.

10. Cover pan with clear plastic wrap and then tin foil. The reason for this: so the acid in the cheese will not eat the tinfoil.

11. Bake in oven for 1 hours.

12. Remove the cover and put back in oven to brown the top of the lasagne, about 15 minutes.

13. Let lasagne set for hour before serving.

14. Cut into desired serving size, heat remaining tomato sauce, and place sauce onto plate or bowl and place lasagne on top of sauce.
