A recipe is merely words on paper; a guideline, a starting point from which to improvise. It cannot pretend to replace the practiced hand and telling glance of a watchful cook. For that reason feel free to stir your own ideas into this dish. When you cook it once, it becomes yours, so personalize it a bit. Add more of an ingredient you like or less of something you don't like. Try substituting one ingredient for another. Remember words have no flavour; you have to add your own!
Directions for: Southwestern Fruit Salad
Ingredients
3 Tbsp of olive oil
1 pineapple, peeled and sliced into one inch rounds
2 ripe tomatoes, cut into chunks
2 seedless oranges, peeled and cut into chunks
1 jicama, peeled and cut into thin slices
1 small bunch fresh cilantro leaves
Zest and juice of 1 lime
Dash hot sauce
Salt
Directions
1. Preheat an outdoor or indoor grill to high.
2. Toss pineapple with oil, salt and pepper and grill it on both sides until grill marks appear and it's tender and juicy. Cut into large chunks and place in a salad bowl. Add tomatoes, oranges, jicama, cilantro, lime zest and juice and a dash or two of hot sauce. Adjust seasoning and toss well before serving.
