Directions for: Chipotle Pork Tenderloin Wraps
Ingredients
Pork Skewers2 1 lb(s) pork tenderloins
2 Tbsp (30 mL) olive oil
2 Tbsp chipotle in adobo sauce, chopped
tsp (2 mL) kosher salt
freshly ground pepper
8 wooden skewers
8 6-inch flour tortillas
3 cup (750 mL) lettuce, shredded
Cilantro Sauce & Assemblycup (125 mL) sour cream
cup (60 mL) mayonnaise
2 Tbsp (30 mL) lemon juice
1 tsp (5 mL) lemon zest
2 Tbsp (30 mL) cilantro, chopped
Directions
Pork Skewers1. Slice each pork tenderloin into 16 pieces, approximately 1 1/2-inch chunks and place in a large bowl. Add oil, chipotle, salt and pepper and stir to coat. Cover and marinate in the refrigerator for 1 hour. Soak skewers in water for 30 minutes.
Cilantro Sauce & Assembly1. Combine sour cream with mayonnaise, lemon juice, lemon zest and cilantro in a medium bowl. Reserve.
2. Thread 4 pieces of pork onto each skewer. Preheat bbq or grill pan to medium high. Cook skewers until grill marks appear and pork is just slightly pink in the centre, about 4 minutes per side.
3. Arrange lettuce in the centre of each tortilla. Slide pork off the skewer and onto the lettuce. Garnish with cilantro sauce. Roll up and serve.
