
Directions for: Lamb Chops with Mint Gremolata
Ingredients
For the Mint Gremolata1 clove garlic, finely chopped
Grated zest of 1 lemon
60 mL (1/4 cup) packed fresh mint leaves, finely chopped
For the Lamb Chops6 lamb rib or loin chops, about 4 cm (1 1/2 inches) thick
30 mL (2 tablespoons) olive oil
5 mL (1 teaspoon) paprika
Salt and pepper
Directions
For the Mint Gremolata1. In a bowl, combine all the ingredients. Set aside.
For the Lamb Chops1. Preheat the grill, setting the burners to high.
2. In a large bowl, combine the oil and paprika. Add the chops and coat well. Season with salt and pepper.
3. Grill the chops until still pink in the centre, about 3 minutes per side depending on thickness.
4. Note: Sprinkle the gremolata on the chops. Serve with Grilled Porcini and Sun-Dried Tomato Polenta (see recipe) and strips of grilled orange bell pepper.
