
Directions for: Grilled Freshwater Shrimp with Garlic-Citrus Sauce
Ingredients
Garlic-Citrus Sauce6 garlic, cloves, whole
1 cup fresh orange, juice
6 Tbsp lime, juice
tsp sugar
vanilla, bean, scraped
4 Tbsp cold unsalted butter, cut into small pieces
1 tsp salt
Shrimp1 lb(s) freshwater shrimp, deveined, halved, in the shell
2 cloves garlic, chopped
2 Tbsp chopped fresh parsley
3 Tbsp butter
tsp salt
lemon, wedges, for garnish
Directions
Garlic-Citrus Sauce1. Into a small saucepan add the 6 thinly sliced cloves of garlic, orange juice, 2 tablespoons lime juice, sugar and scrapings from the vanilla bean.
2. Bring to a simmer over medium heat. Reduce heat to medium low. Gently simmer the garlic cloves in the juice for about 25 to 30 minutes until the juice has reduced to a caramel-coloured syrup and the garlic is soft.
3. Using a fork, crush the garlic in the sauce.
4. Whisk in the butter one piece at a time until it is incorporated into the sauce and the mixture is emulsified. If the sauce is too thick thin it with the remaining lime juice.
5. Season the sauce with 1 teaspoon salt.
Shrimp1. Preheat the grill.
2. Melt butter in a skillet over medium heat. Add 2 cloves chopped garlic, parsley and teaspoon salt. Stir ingredients into a paste. Spoon 1 tablespoon paste onto each shrimp half. Refrigerate overnight.
3. Grill shrimp for about 2 minutes per side until shrimp turns pink and is just cooked through. Serve with the sauce and lemon wedges.
