Directions for: Grilled Cubano Sandwiches
Ingredients
Citrus-Marinated Pork Loin1 lb(s) (500 g) boneless centre-cut pork loin
cup (60 mL) mango juice
1 Tbsp (15 mL) lime juice
1 Tbsp (15 mL) olive oil
2 clove garlic, minced
tsp (2 mL) each salt and dried oregano
tsp (1 mL) pepper
Sandwiches3 Tbsp (45 mL) butter, softened
12 1/2-inch-thick (1 cm) slices egg bread or Italian bread
cup (75 mL) light mayonnaise
3 Tbsp (45 mL) grainy or yellow mustard
6 deli-thin slices Black Forest ham
6 deli-thin slices Provolone or Swiss cheese
12 slices dill pickle
Directions
Citrus-Marinated Pork Loin1. Cut pork loin into -inch (1 cm) thick slices. In glass bowl, stir together mango juice, lime juice, oil, garlic, salt, oregano and pepper; add pork, turning to coat. Cover and refrigerate for at least 15 minutes or up to 1 hour.
2. Drain pork; place on greased grill over medium heat. Close lid and grill, turning once, until lightly charred and cooked through, 4 to 6 minutes. Transfer to plate.
Sandwiches1. Butter one side of each bread slice. In small bowl, whisk mayonnaise and mustard; spread on non-buttered side of bread slices and layer one slice each cheese and ham, two slices pickle, and few slices of pork between the bread slices.
2. On greased grill over medium heat or using Panini press, grill sandwiches (buttered-side of sandwiches should be on the grill) until heated through, lightly charred, and cheese is melted, 6 to 8 minutes. Turn once, if using grill.
