Directions for: Spinach Salad with Bacon, Cashews and Apples
Ingredients
Spinach Salad with Bacon Cashe5 cup spinach leaves
1 cup crumbled freshly cooked bacon or 12 pieces whole Pancetta bacon crisped up
cup toasted cashews coarsely chopped
2 sweet crisp apples (like gala or granny smith) sliced into matchsticks, skin on
cup red onion sliced thin
1 cup bean sprouts washed and dried
Vinaigrette1 shallot minced fine
2 Tbsp red wine vinegar
1 Tbsp fresh lemon juice
2 tsp Dijon mustard
cup olive oil
Salt and pepper to taste
Directions
Spinach Salad with Bacon Cashe1. Place all fresh salad ingredients into a bowl and toss.
Vinaigrette1. To prepare the vinaigrette, place all ingredients in a small mason jar and shake until well combined.
2. Pour dressing over mixture and toss again to evenly coat.
