This dish of tasty tropical fruit and grilled pork from Roger Mooking makes for a refreshingly-different dinner.
Directions for: Grilled Passion Fruit Pork Satays with Passion Fruit Tzatziki
Ingredients
Grilled Passion Fruit Pork Sat1 3-4 lb boneless pork shoulder, trimmed and cut into 1 inch cubes
2 passion fruits
1 shallot, minced
cup coconut milk
1 Tbsp black pepper
cup basil, finely chopped, stems reserved for Passion Fruit Basil Syrup recipe
Passion Fruit Tzatziki1 cup cream cheese
cup milk
2 passion fruits
1 shallot, minced
lemon, juiced
cup basil, finely chopped
salt and pepper
Directions
Grilled Passion Fruit Pork Sat1. Place all ingredients in a dish, mix well to ensure pork is coated in marinade. Place pork in fridge to marinate for a minimum of half an hour, maximum 24 hours.
2. Preheat grill.
3. Remove marinated pork from fridge, skewer approximately 5 pieces of pork per skewer.
4. Season pork with salt and place satays on grill.
5. Grill on all sides, once charred and cooked through, remove from heat and enjoy with Passion Fruit Tzatziki.
Passion Fruit Tzatziki1. Place the pulp of 1 passion fruit and remaining ingredients in a bowl, mix to incorporate.
2. Spoon remaining passion fruit pulp on top of mixture, cover and place in fridge until ready to serve.
