Ingredients
Grilled Chicken with Peaches a4 bone-in chicken breast halves, skin removed
2 small fennel bulbs, thinly sliced lengthwise
2 peaches, halved
cup sour cream
Salt and pepper
MarinadeGrated zest and juice of 1 lemon
cup honey
cup olive oil
cup water
2 tsp fennel seeds, crushed
2 tsp mustard seeds, crushed
2 tsp fresh rosemary, finely chopped
1 tsp salt
Directions
Grilled Chicken with Peaches a1. Preheat the grill, setting the burners to medium. Grill the chicken until cooked through, about 8 minutes per side. If necessary, lower the temperature to avoid burning. Keep warm. Brush the fennel and peaches with oil. In a perforated grill wok or pizza plate, grill the fennel until tender. Season with salt and pepper. Grill the peaches for about 2 minutes per side. Season with salt and pepper. Serve the chicken with the fennel and peaches. Serve sour cream on the side.
Marinade1. Combine all the marinade ingredients in a glass dish. Add the chicken and coat well. Cover and refrigerate for 12 to 24 hours.
