Directions for: Grilled Zucchini
Ingredients
3 zucchini (medium size), cut into inch thick slices
cup rice vinegar
3 Tbsp olive oil
cup fresh dill sprigs, chopped
Directions
1. Preheat grill to medium high. Toss zucchini slices with a little oil. Place on grill turning to make grill marks. Leave on grill for about 5 minutes turning once.
2. In a stainless steel bowl mix together rice vinegar, olive oil and chopped fresh dill sprigs.Place warm zucchini in marinade and allow to cool.
3. Refrigerate until ready to serve.
