Directions for: Lamb Souvlaki with Rice and Watermelon Salad
Ingredients
Lamb Souvlaki with Rice6 4- 6 Bamboo Skewers
2 lb(s) (900 gms) Boneless Lamb (1.50 lbs after trimming fat)
Re-Sealable Freezer Bag
cup Olive Oil
tsp Prepared Garlic (From a jar)
1 Tbsp Oregano
tsp Rosemary
Salt and Pepper to Taste
2 Tbsp Lemon Juice
1 Tbsp Red Wine (Or red wine vinegar)
1 medium Medium Red Onion
2 Assorted Colored Peppers
1 cup Wild and White Rice Blend with Dehydrated Veggies (Canoe brand)
2 cup Water
Reserved Skewers
Watermelon Saladcup Red Onion
1 cup Watermelon
cup Feta Cheese, Crumbled
cup Kalamata Olives
tsp Dry Mint Leaves
Salt and Pepper
1 tsp Olive Oil
Serve on Lettuce Leaves (Optional)
Directions
Lamb Souvlaki with Rice1. Take out equipment and ingredients.
2. The night before:
3. Soak skewers in water overnight. It makes it a lot easier to skewer the meat.
4. Cut lamb into 2" cubes. Place lamb cubes in a re-sealable freezer bag. Combine olive oil, garlic, oregano, rosemary, salt, pepper, lemon juice and red wine in a small bowl.
5. Pour olive oil mixture into lamb freezer bag. Seal bag and squish around until lamb cubes are coated. Place in fridge overnight.
6. Chop red onion into eighths. You will have 8 chunks. Cut peppers into large chunks. Cover and let stand in fridge.
7. When you get home: Preheat BBQ to med (approx 350 F). Combine rice and water in a large microwave safe pot with lid. Microwave at high for 10 minutes then medium for 10 minutes.
8. Thread skewers with the meat and vegetables, alternating lamb cubes with the vegetables.
9. Remove the small inside parts of the red onion and reserve for your salad.
10. Place skewers on BBQ. Grill to desired doneness (approx 10 minutes). Baste skewers with any remaining marinade.
Watermelon Salad1. Meanwhile: Sliver or finely chop reserved onion and place in a large bowl.
2. Cut watermelon into bite size pieces and add to bowl. .
3. Add feta cheese and olives.
4. Sprinkle with mint leaves, salt, and pepper. Drizzle with olive oil.
5. Toss until everything is coated. Let stand until ready to serve
