Directions for: Gold Seal Tuna and White Bean Salad
Ingredients
2 can (130 g) Gold Seal No Drain Solid Light Tuna with sunflower oil
5 oz baby spinach leaves
2 tomatoes, sliced
English cucumber, thinly sliced
1 can (12 oz) white beans, drained
2 Tbsp olive oil
2 Tbsp lemon juice
cracked black pepper, to taste
chopped parsley or dill, optional
Directions
1. Divide spinach, tomato, cucumber, beans and tuna among four plates.
2. Whisk oil, lemon juice, and pepper in small bowl; drizzle over salad.
3. Sprinkle parsley or dill over top and serve with whole-wheat toast.
4. Chef's Suggestion: For a hint of spice add thinly sliced red chilli pepper.
